The CHAMP recipe by Eamonn Holmes, well loved journalist and broadcaster, is described in the cook book, “A Good Helping” as:
“….a delicious Irish speciality which is simple and quick to cook. It should be served with plenty of melted butter drizzling down – but the health conscious can reduce this.”
A Good Helping has been compiled by Shine member Rebecca Morris, who shares her story here.
She has collected recipes from celebrities and other inspirational people such as Baroness Tanni Grey Thompson DBE, Ainsley Harriot, Hugh Bonneville and Dame Ellen MacArthur, there is even a recipe from Rebecca and Benny Bear!
